4 ¼” slices of a green tomato
2 cups all purpose flour
2 eggs whisked
2 cups breadcrumbs
Salt and Pepper to taste
1/4 cup canola oil (or enough to fully cover tomato slices)
1 lb bacon (cut into small pieces)
1 yellow onion (diced)
5 cloves garlic (diced)
1 cup of vinegar
1 cup sweet tea
1 cup TonTon Hibachi Sauce
Put flour, eggs, and breadcrumbs each in a shallow bowl
Dunk tomatoes into flour, then into eggs, then into breadcrumbs
Heat oil in pan over medium – high heat
Slowly drop tomatoes into the pan with preheated frying oil
Fry until golden brown on all sides, approx. 3 mins
You can add 2-4 slices of tomato to your pan. Repeat to finish cooking all slices
Lift cooked tomato slices out of oil with a metal spatula and place then on a metal great
Heat a large skillet over low-medium heat.
Add bacon and cook over medium-low heat 10 minutes or until the fat is released and the meat is crisp and browned
Remove bacon from skillet and set aside, reserving the cooking grease
Add onion to bacon grease and cook over medium heat stirring occasionally - approx. 8 mins or until tender
Add garlic to skillet and cook stirring often for approx. 1-2 mins until fragrant being careful not to burn
Add bacon and remaining ingredients to skillet and reduce to desired consistency (approx. 10 mins or desired consistency
Serve Tomatoes with Hibachi Bacon Jam, Arugula, and a handful of chopped cherry tomatoes.
