1/2 Cup TonTon® Kobe Sauce
1 eggplant; cut into 2 in pieces lengthwise
3 tsp lemongrass paste
4 Tbsp Japanese Kewpie mayo (or dukes)
1 tsp lemon juice
2-3 watermelon radish; sliced thin crosswise
1/4 Cup walnuts; toasted then chopped
1 Tbsp sesame seeds
Leafy greens
Preheat oven to 350℉
Toss eggplant in TonTon® Kobe Sauce; cook on baking sheet for 15 minutes
Mix together lemongrass paste, mayo, lemon juice, pinch of salt
Brush on more sauce and finish eggplant under broiler until glazed – approx. 4-5 mins
Plate lemongrass sauce first, leafy greens, eggplant on top
Garnish with walnuts and radishes
