1 cup heavy cream
3 cups water
1 ¼ cups grits (dry)
2 T butter
1 Tbsp olive oil
3 Tbsp TonTon Yuzu Sauce
4 Cups sharp cheddar cheese shredded
5 oz fresh baby spinach leaves
1 lb shrimp peeled and deveined
Add water and heavy cream to a medium sauce pan and bring to a boil
Slowly add grits while whisking to avoid lumps and reduce to simmer
Cover grits and cook over medium low heat for 15-20 minutes stirring often
Once grits are cooked, add butter and cheese, stir to combine
Heat 1 Tbsp olive oil in skillet over medium-high heat
Add the shrimp, and cook for 2 minutes
Stir in the spinach and cook just until the greens are wilted and shrimp turn pink (aprox 2-3 min)
Add the Yuzu Sauce to the pan and coat shrimp and spinach
To serve, spoon shrimp mixture over grits
