2 boneless chicken thighs
1/4 Cup Garlic Scallion
1Cup potato starch
1 Cup peeled and rinsed Daikon
1 bunch of Cilantro
Lime wedges from 1 lime
1 tsp chili oil
4-6 Cups of vegetable or peanut oil for frying
Rinse and dry chicken; cut chicken into bite size pieces
Marinade chicken in TonTon Garlic Scallion for 30-45 minutes
Heat oil ~300º F
Dredge chicken in potato starch, and fry in small batches 3-4 minutes
Remove chicken and let rest while heating oil up to 350º F
Re-fry chicken for an extra 4 minutes and it reaches an internal temperature of 165º
Garnish with daikon, chili oil, cilantro, and lime wedge
